The ensaimada is undoubtedly one of the most renowned gourmet products of the Mallorcan gastronomy. Trying this sweet and delicious pastry has become one of the many “musts” on a visit to the island.
You can find an array of different ensaimadas, from the traditional with powdered sugar to the stuffed (with spaghetti squash jam, toasted custard, chocolate, whipped cream...). It is also flavoured with sobrasada (a spicy sausage very typical of the island), candied fruits, apricots... there are as many varieties as the baker's imagination.
The ingredients in a Mallorcan ensaimada all belong to the basic Mediterranean diet: wheat flour, fresh eggs, sugar, yeast, milk and lard.
The first written references to the ensaimada in Mallorca date back to the 17th century. At the time, the main use of wheat flour was making bread, but there are documents that describe making Mallorcan ensaimadas for special occasions and celebrations, a tradition that has endured throughout the centuries. Every event in a Mallorcan home boasts an ensaimada to delight its participants.
