Without a doubt, dolphinfish is one of the most prized fish on the island of Mallorca, and next month, September, is when the fishing season begins.

Interestingly, this delicacy is only fished in Mallorca, Sicily, Algeria and Malta. Mallorcan and Maltese fishermen are the only ones who still use traditional techniques. It is a fish that lives in shallow waters and can only be found in submarine shadow points. In order to protect this species, there is a maximum catch quota per boat.

Sliced and grilled, breaded or fried, dolphinfish is one of the gastronomic delights that should not be missed if you visit the island in late autumn or early winter.
